为什么要用a而不用an呢?university明明是元音字母开头.

说起来元音,不是按照元音字母,而是发音来的.
univ的开头发音是/ju:/其中的j是辅音的发音,而不是元音,所以用an,同样的,honest虽然开头是h,但是还是用an honest man,因为发音是/o/.
所以用an还是a,取决于开头的发音是否为元音,而不是单词拼写
